Even with all the rain, this warmer weather has got me making daily salads again. It’s been a while since I’ve eaten raw spinach salads and this one has become my current favorite. Spinach is an excellent source of vitamins A and C. It contains protein and iron, making this salad great for a meatless meal. This whole plate is like a giant multivitamin supplement and so delicious and easy to whip up. I don’t measure, so I’m estimating measurements here. Just eyeball it yourself and add more of what you think you’ll like. Enjoy!
1-2 cups raw washed spinach leaves (2 big handfuls)
5 strawberries sliced thin
small handful (1/4 cup?) dried cherries
small handful (5-6) walnut halves, broken into small pieces
Newman’s Own Raspberry Walnut Dressing (contains no HFCS)
Non-Vegan Option: Sprinkle with feta cheese
- Toss the first 4 ingredients and feta, if using, together.
- Drizzle with dressing and enjoy.
